Mushroom and Thyme Hand Pies

These hand pies are perfect for winter, featuring a savory mushroom filling infused with fragrant thyme, all wrapped in flaky pastry. They’re portable, comforting, and ideal for cozy meals or snacks.

Health Benefits:

  • Mushrooms: Rich in antioxidants, B vitamins, and selenium, mushrooms support immune function and overall health.
  • Thyme: Contains antimicrobial properties and adds a fragrant herbal boost.
  • Whole Wheat Pastry (optional): If using whole wheat flour, it adds fiber and nutrients, making these hand pies more wholesome.

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 8 ounces mushrooms (button, cremini, or a mix), finely chopped
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1 tablespoon soy sauce or tamari
  • Salt and black pepper, to taste
  • 1 sheet puff pastry (vegan if needed), thawed
  • 1 egg, beaten (for egg wash)
    • Vegan Alternative: Use a mixture of plant-based milk and maple syrup for the wash.

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Heat olive oil in a skillet over medium heat. Add the onion and garlic; sauté until softened, about 5 minutes.
  3. Add the mushrooms, thyme, soy sauce, salt, and pepper. Cook until the mushrooms release their liquid and it evaporates, about 10 minutes. Remove from heat and let cool.
  4. Roll out the puff pastry and cut into 4-6 rectangles or circles, depending on your desired shape.
  5. Place a spoonful of the mushroom filling in the center of each piece. Fold the pastry over to enclose the filling, sealing the edges with a fork.
  6. Brush the tops with the beaten egg or vegan wash. Place the hand pies on the prepared baking sheet.
  7. Bake for 20-25 minutes, or until golden and puffed. Let cool slightly before serving.

Suggested Pairings:

  • Wine: A medium-bodied Pinot Noir or a dry Sauvignon Blanc complements the earthiness of the mushrooms and the buttery pastry.
  • Beer: A nutty brown ale or a crisp pilsner pairs well with the savory filling.
  • Nonalcoholic: Sparkling water with a splash of apple cider vinegar and a sprig of thyme for a refreshing herbal drink.

These Mushroom and Thyme Hand Pies are a versatile, satisfying option for everything from lunches to elegant party appetizers.
